Quick 15-Minute Queso (Cheese Dip)

Melted cheese seasoned with chili and garlic powder, peppers and tomatoes. Served with warm tortilla chips. Perfect for game day and as a side to your favorite Mexican meal!

  • 1 lbs Velveeta cheese
  • 1/2 cup chicken bone broth or chicken broth
  • 10 oz Rotel tomatoes
  • 1/2 cup diced onions
  • 1 tbsp butter
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • 1/4 tsp smoked paprika optional
  • 1/4 tsp tabasco optional
  • cilantro optional


  1. Dice onions

  2. In a saucepan, add butter and diced onions and cook for 4-5 minutes. Add Velveeta cheese, chicken bone broth, Rotel tomatoes, garlic powder, and chili powder. Can add smoked paprika, tabasco if desire. Cook until desired consistency.

  3. Serve with chips. Optional: Garnish with cilantro. Enjoy!

Recipe Notes

Add more chicken broth to make a more liquidy queso. 

Chicken bone broth provides a deeper broth flavor, which is my preference. Regular chicken broth will work as well.
